Ingredients
2 Tbsp. olive oil2 lbs. red new potatoes quartered1 zucchini sliced in 1/4 inch slices1/2 cup coarsly chopped red onion1 bell pepper cut in 1/4 inch strips2 tsp. minced garlicSalt and pepper or other seasoning to taste
Directions
Heat 1 Tbsp oil in nonstick skillet over med-high heat. Add potatoes and cook until starting to soften and brown. Add remaining oil and remaining ingredients including salt and pepper or other seasoning blend, such as Mrs. Dash and cook until veegetables are browned and tender.

    this was great! we had this as the side dish for salmon. every last scrap was eaten up! i used twice as much zucchini, fewer potatoes, and less oil, to take the calories per serving down a bit... but we all had more than just a serving :) - 1/27/09
