Tuna mac salad

Ingredients
4 oz Tuna (6 oz prior to draining)8 oz whole wheat macaroni3 tbsp Hellmans light1 cup chopped green pepper1/4 cup dill relish1 oz almondssalt/pepper/spices to taste
Directions
Cook macaroni according to instructions on package. Chop bell pepper and almonds. Drain tuna and add all ingredients together. Salt/Pepper to taste.

Almonds can be omitted - they are more for the crunchy texture and MUFA than flavor.

1 serving = 1.25 - 1.5 cups

    I usually add diced celery, carrots and apples for crunch. Helps get the veggies in as well. I like to use McCormick's salt free All-Purpose or Spicy Seasonings. Started adding celery and apples when I read they help lower cholesterol. This makes a good lunch to carry to work. - 2/1/09
