Ingredients
1 - 16 oz. canned Chick Peas - drained and rinsed 1 medium whole (2-3/5" dia) Tomato, red, ripe, raw, year round average 1 cup, pared, chopped Cucumber (peeled) .5 cup, chopped Onions, raw 74 gram(s) bell pepper, red, sweet, raw 2 tbsp Extra Virgin Olive Oil 2 serving Lemon, fresh squeezed, juice of one whole lemon
Directions
Drain and rinse chick peas. Roughly chop tomatoes. Chop & peel cucumber. Chop pepper and onions. Combine all veggies in a bowl. Drizzle with lemon juice and oil. Mix well. Garnish with fresh cilantro if desired.
