Spinello Artichoke Frittata

2.5 cup Artichoke hearts marinated drained 1.5 cup Ricotta Cheese, whole milk 3 large Egg, fresh, whole, raw 0.25 cup Parmesan Cheese, grated 1 tbsp Parsley, dried 1.5 tbsp Extra Virgin Olive Oil 1.5 cup, chopped Onions, raw
Drain and rinse artichokes (if using marinated, press to remove excess oil). Add eggs, cheeses and parsley. Sauté onion onion until softened. Cool a little then add to remaining ingredients.
Butter 9 or 10 inch pie dish. Heat oven to 350 degrees. Pour mixture into pie dish. Bake at 350 for 45 to 50 minutes.
