12 oz Salt Pork (cured pork) 16 cup Peruvian beans 1/2 cup cooked without salt (oc) (by LIVIE3) 3 pepper Serrano Peppers 1 pepper Pepper, ancho, dried 4 tbsp Onions, dehydrated flakes 3 tbsp Garlic powder .5 medium (2-1/2" dia) Onions, raw 32 oz Kirkland Chicken Stock 12 tsp Cayenne Pepper (Ground) 8 oz Baby Carrots
1. Soak 2lb. bag of beans for 10 hours, changing water and adding 2T baking soda each time
2. Finely dice salt pork (1/4") and put in bottom of crock pot.
3. Set crock pot on high and let cook for 45 minutes
4. Finely chop Chipotle chili, ring slice the serranos
5. Add chilis, spices to salt pork. Stir and let cook for 30 minutes.
6. Add beans, stock and stir well
7. Put crock pot on low and let it run for 12-14 hours
