Asparagus Quinoa Chickpea salad

Ingredients
.5 cup Quinoa minute 2 tbsp Extra Virgin Olive Oil 1 clove Garlic 1 cup Chickpeas (garbanzo beans) 8 spear, medium (5-1/4" to 7" long) Asparagus, fresh 0.13 cup Lemon Juice 1 tsp Dijon Mustard (Great Value) 2 oz Mozzarella
Directions
1. Cook Quinoa
2. Cook/Blanche asparagus
3. Mix in lemon juice, olive oil, and mustard
4. Mix in garlic
5. Add dressing to asparagus, quinoa, chickpeas, and cheese.
Optional: add minced basil
