3 small Sweet potato, cooked, baked in skin, without salt 1.5 cup Chickpeas (garbanzo beans) 1.5 cup Panko Gluten Free Bread Crumbs (by CD7485575) 3.5 tbsp Grapeseed Oil
Bake sweet potatoes (1 hr- 1/12 hr)
cool bake potatoes
Peel potatoes and place in medium mixing bowl
Drain chickpeas and pour in sweet potato. Use masher to combine (Do not over mix, chickpeas should somewhat maintain their shape)
take spoon full and roll into ball, coat in panko.
Heat skillet with the oil.
Toast until brown and flip.
Bake in oven for 15-20 minutes at 350 to further cook.
Serving Size: 32 patties- 1 inch circle
