Creamy Carrot Soup

Ingredients
tablespoons lite butter1 medium onion, chopped1 rib celery with a few leaves, chopped2 cups carrots, sliced2 cups chicken broth1 tablespoon uncooked rice1 cup milk1 teaspoon salt1/4 teaspoon nutmeg1/4 teaspoon curry powder1/8 teaspoon pepper
Directions
Melt butter or oil; add onion and celery; cook till tender.

Add carrots; cook 5 minutes.

Add broth and rice, bring to a boil. Cover and cook till rice and carrots are tender (about 20 minutes). Puree in blender. Add milk and seasonings. Simmer 5-10 minutes but do not boil.

Makes about 4, 1 cup servings
