Ricki's Date Cake

75 g finely chopped dried (unsweetened) dates1 cup boiling water1/3 cup brown sugar1/4 cup unsweetened plain almond milk 1/4 cup applesauce1 tbsp vanilla1 cup + 2 tbsp whole wheat pastry flour2 tsp cornstarch1 1/2 tbsp cocoa powder1/2 tsp baking soda1 tsp baking powder1/4 tsp salt~Topping~2 tbsp brown sugar3 tbsp unsweetened shredded coconut1/3 cup dark chocolate chips
Preheat oven to 350 F, and lightly grease an 8-inch square pan.
Soak dates in the boiling water for 15 minutes.
Add the sugar, almond milk, applesauce and vanilla, whisk to blend well.
In a large bowl, whisk together the flour, cornstarch, cocoa, baking soda, baking powder, and salt. Pour the wet mixture over the dry and stir gently to blend.
Pour into the prepared pan, smoothing the top.
Combine and sprinkle the topping ingredients over the cake.
Bake for 35-40 minutes.
Allow to chill before cutting.
