Roasted Asparagus Spears

2 dozen large spears fresh asparagus1 tablespoon extra virgin olive oil1/4 teaspoon kosher salt (or to taste)1/4 teaspoon freshly ground black pepper (or to taste)
Cut 1/4 to 1/2 inch off the rough end of the spears. Using a vegetable peeler, peel the lower fourth of each spear. Place in a large zip-lock bag or baking dish. Add 1 tablespoon extra virgin olive oil and mix together well, covering all spears with a bit of oil.
Preheat oven to 450. Place a piece of parchment on a half sheet pan. Add the asparagus to the pan and season with salt and pepper to taste. When the oven is ready, place the pan on the middle rack and cook for 8 to 10 minutes. Toss the asparagus and cook for another 2 to 3 minutes until crisp tender or longer to cook to your desired degree of tenderness.
