Chicken Salad Sandwhich

Ingredients
2 Skinless de-boned cooked chicken breast (cut up)3 tbs no fat cottage cheese2 tbs low fat hard white cheese1 tsp mustard1/2 tsp minced garlicdash black pepper4 slices whole grain bread2 lettuce leaves8 thin tomato slices1 tsp lemon juice
Directions
Combine chicken, lemon juice, cottage cheese, mustard, garlic, pepper. Spread 1 cup chicken mixture over each of 2 bread slices. top each with 1 lettuce leaf and 4 tomato slices and 1 bread slice. Serve!

If taken to work store in a zip lock bag to keep them fresh
