1/2 cup brown rice cooked in 1 cup water1 cup frozen corn kernals ( thawed)1 small carrot shredded1 small jalapeno, diced1/8 cup diced green olives1/4 cup diced yellow bell pepper1/4 cup diced red bell pepper1/4 cup sliced green onions2 ounces pepper jack cheese cubed smalldressingmix 1/2 teaspoon crushed red pepper 1 1/2 teaspoons lime juice 1 1/2 white wine or rice vinegar 1 teaspoon olive oil 1/2 teaspoon minced garlic 1/4 teaspoon sugar salt and pepper to taste
cook brown rice until tender -may need to add a little more water
add chopped ingredients
mix dressing and add -
can be served room temp or cold
