Sausage and Cheese Breakfast Cups

Ingredients
4 oz. cooked Jimmy Dean reduced fat sausage1/2 c. red bell pepper, diced1/2 c. onion, diced5 large eggs, well beaten2 oz. (1/2 c.) shredded, reduced-fat cheddar cheese
Directions
Preheat the oven to 350 degrees. Coat a 6 cup nonstick muffin pan with cooking spray, or line with baking cups. In a med. nonstick skillet, cook the sausage, pepper and onion for 5 minutes or until the sausage is no longer pink. Spoon the mixture evenly into a bowl and cool slightly. Stir in the eggs evenly between the cups. Sprinkle with cheese and back for 20 minutes or until the eggs are set.
