Queso Chicken

Ingredients
2 Lb Sanderson Farms Boneless Skinless Chicken 1 cup Buttermilk 1 tbsp Chili powder 3 tsp Cumin 3 tsp goya adobo 2 tsp Garlic 2 tsp Red Pepper Flakes 10 oz Rotel Diced Tomatoes & green chilis (by ERIKIM2004) 1 1/4 cup Cheese - Food Lion - Mexican 4 Cheese - 110cal/1/4 cup1 Cup Tostitos queso Blanco dip
Directions
Soak chicken in buttermilk at least half an hour, up to overnight. Drain and pat dry. Add taco seasoning to each side and place in a baking dish (I make my own seasoning using the ingredients listed. I usually add oregano, but I was out). Drain rotels and put half a can over the chicken, layer with queso, and then the remaining rotels. Top with cheese. Bake at 375 for 25-30 Minutes
