Spicy Black beans with corn and sweet potato over rice

1 tsp Olive Oil 1 clove Garlic , chopped1.5 cup Black Beans - canned, rinsed and drained1.5 cup Yellow Sweet Corn, Canned, rinsed and drained1.5 cup, Sweet potato, peeled and cubed into small pieces1 TBSP hot and sweet Jalapeno, chopped (or use fresh)1 TBSP Lime Juice 2 tsp Cajun Seasoning2 tsp smoked paprika2 tsp Goya Adobo seasoning1 cup Brown Rice, long grain (cooked in 2 cups water) (Optional toppings: not included in nutritional count, chopped avocado, sour cream, chopped lettuce and tomatoes.)
Steam brown rice according to directions. While rice cooks:
1. saute garlic in olive oil
2. add chopped jalapeno and sweet potato, stir for 2 minutes over medium heat.
3. add black beans, corn, and seasonings (add more or less to taste)
4. Add lime juice
5. simmer on very low heat for 20-30 minutes, until sweet potato is tender.
Serving Size: Makes 4 servings: 1/2 cup rice, 1 cup black bean mixture
