Applesauce Oatmeal Muffin with Coconut Milk

Ingredients
1 cup Old Fashioned Quaker Oatmeal- Plain 1 cup Thai Kitchen Coconut milk (unsweetened) 3/4 cup White Whole Wheat Flour 1/2 cup Flour, Gold Medal, All-Purpose 1/2 cup, packed Brown Sugar 1/2 cup Applesauce, unsweetened 2 large Egg white, fresh 1 tsp Baking Powder 1/2 tsp Baking Soda 1/2 tsp Salt 1/2 tsp Cinnamon, ground 1/4 tsp Nutmeg, ground
Directions
-Soak oats in coconut milk for 1 hour .
-Combine oat mixture with applesauce and mix.
-In a seperate bowl combine dry ingredients
-Whip egg whits until soft peaks form
-Comine dry and wet ingredients (except egg whites) and mix just until combined.
-Fold in egg whites until no more white can been seen.
-Do not overmix.
-Add nuts or raisins if desired.
Spray and fill muffin tins
Bake 20-25 min or until done.
Remove from pan to cool.
These can be frozen
