0.5 cup, chopped Onions, raw 4 clove Garlic 2 cup Lentils 2 cup Cauliflower, raw 4 sweetpotato, 5" long Sweet potato 3 tbsp Curry powder 1 tsp MORTON Sea Salt, Fine Salt (by ABSAARI84) 1.75 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 4 cup Spinach, frozen
In large pot, saute garlic and onions in small amount of water until lightly browned. Add lentils, 2 cups water, cauliflower, sweet potato, spices, and coconut milk and stir. Add lid and bring to boil, reduce heat and simmer, cover, and cook for 25 minutes. Add spinach, stir, and cook for another 5 minutes. Serve over rice or favorite steamed veggie.
