Fresh Tomato Sauce - Marinara

Ingredients
1 medium (2-1/2" dia) Onions, raw 1 tbsp Butter, salted 1 tbsp Oregano, ground 1 tbsp Basil 1 tbsp Rosemary 4 clove Garlic 1 tbsp Extra Virgin Olive Oil 12 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
Directions
Gather the ingredients, it is better to have fresh herbs But if you have dried use half as much. Saute the chopped onion and garlic in the oil and butter until golden in a large pot. Puree the tomatoes and herbs in a blender or food processer and add to the pot. Simmer it until at least half the liquid evaporates, about two hours. As it gets thick be sure not to let it burn. When it is thick cover and turn to the lowest setting to let it simmer for another hour or two. Salt to taste. Use this on pasta or spaghetti squash. The better your tomatoes taste the better this sauce will be.
