Baked Apple Cinnamon Oatmeal Muffin Cups

1.5 cups whole milk2 large eggs, beaten1/2 cup pure maple syrup3 cups old-fashioned whole oats1t baking powder1.5t ground cinnamon1/4t ground nutmeg1t vanilla extract1/4t salt1 heaping cup chopped appleoptional: 1/2c chopped walnuts or pecansoptional: coarse sugar for topping
Preheat oven to 350 degrees F. Generously spray a muffin pan with nonstick spray.
Whisk all ingredients together except apples in large bowl. Fold in apples and nuts, if using. Spoon or ladle batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. If desired, sprinkle tops with coarse sugar.
Bake for 25-30 minutes or until edges are lightly brown & top appears set.
Cool for 5 minutes before serving. Cover and refrigerate leftover muffins for up to one week.
