1 eggplant, peeled (yield from 1 Eggplant, fresh 4 tbsp Tahini 2 serving Lemon, fresh squeezed, juice of one whole lemon 2 clove Garlic .5 tsp Salt 1 tbsp Extra Virgin Olive Oil
1. Cut whole eggplant in half lengthwise and place in an ovenproof pan. Brush cut side with the olive oil, and bake in 400 degree oven for 45 minutes, turning 2 or 3 times until skin is blackened and meat is very soft.
2. Remove eggplant from the oven and let cool for several minutes, until it is easy to handle. Scoop soft meat out of the peel and place in food processor. Discard peel.
3. Add tahini, lemon juice, garlic and salt to the food processor and blend until everything is smooth.
4. Store dip in the refrigerator for up to 1 week. Can be used similarly to hummus.
