Apricot Glazed Pork Tenderloin

Ingredients
2 pork tenderloins, trimmed of fat1 T olive oilcoarse salt and pepper1 12 ounce jar apricot jam1/4 cup spicy brown mustard

You can use the broiler or grill for this...

Heat broiler; set rack 4 inches from heat. Rub pork with oil; season with salt and pepper. Broil 10 minutes.

In small bowl, mix jam and mustard until encorporated.

Remove pork and brush with sauce. Continue broiling and basting until pork is blackened in spots and registers 150 degrees, 5 to 10 minutes more.

Let rest 5 minutes before slicing.
