Hungry Girl Upside Down Key Lime Pies

Ingredients
1 small pkg. sugar free lime gelatin1 packet no-calorie sweetner1 1/2 tblsp. lemon juice1/4 tsp. vanilla extract2 cups Cool Whip lite (thawed)8 low-fat honey graham crackers (2 sheets)
Directions
Dissolve gelatin and sweetner in 1 cup boiling water. Stir until completely dissolved. Add 1/2 cup cold water, lemon juice and vanilla. Chill in refrigerator until slightly thickened but still mixable. Next, stir in the Cool Whip. Mix until thoroughly blended (a wire whisk works best). Divide mixture among seven 1/2 cup custard cups or ramekin dishes. Refrigerate until firm (at least 3 hours). Once ready to serve, crush graham crackers, and evenly distribute the crumbs over the top of the dishes.
