Black Bean Burritos Extraordinaire

Ingredients
6 low-carb taco size flour tortillasOne 15.5-oz. can black beans, drained1/2 fresh jalapeno pepper, chopped1/4 cup onion, chopped2 tbsp fresh cilantro, chopped1.5 avocados, sliced1.5 tomatillos, sliced1/2 can El Pato Tomato Sauce (Mexican Hot Style)6 tbsp. reduced fat sour cream3/4 cup shredded cheddar cheese
Directions
Preheat oven to 425 degrees. Chop jalapeno, onion, and cilantro. Drain beans and put in bowl with jalapeno, onion, and cilantro. Stir together and heat in microwave for 2 minutes. Mash the beans thoroughly with a fork. Spread 1/6 of the mix onto the middle of each tortilla. Top each with 1/8 cup cheddar cheese. Place tortillas on baking sheets in oven just long enough to melt the cheese. While the tortillas are in the oven, slice the tomatillo and the avocado length-wise. Remove tortillas from oven and add a couple pieces of avocado to each burrito. Add 4 pieces of tomatillo to each burrito (more or less to taste). Then add 1 tbsp sour cream per burrito and as much El Pato tomato sauce as desired (it is hot, but delicious). Wrap the burritos up and eat! Makes 6 burritos (DH and I ate 2 each, though!). Mmmm, mmmm, good!
