Pine Nut Squash

Ingredients
2 ounces pine nuts2 large summer squash2 Tbsp olive oil4 tbsp shredded parmesan cheese
Directions
Shred or julienne (if you have a food processor) the squash.

Heat olive oil in large frying pan. Toast pine nuts slightly. Add the squash and parmesan cheese and saute until squash is mostly cooked but not mushy. A few minutes should do it. Serve hot or cold..
