240 grams Eggplant, fresh 420 gram (Veg) Courgette 2 cup Spinach, fresh 150 gram(s) Sainsbury's Organic Pomodorino Tomatoes 1 fruit without skin and seeds Avocados, California (Haas) 2 serving RICE - Uncle Ben's ready rice basmati 1 cup 200 grams Cheddar Cheese
Directions
Steam courgette and eggplant
Cook spinach and tomatoes until wilted
Add courgette, eggplant and avocado
Serve with rice and sprinkle over cheese
