Homemade Lemon Curd

Ingredients
8 fl oz Lemon Juice Lemon Zest ( if desired )1.5 cup Granulated Sugar 6 large Egg, fresh, whole, raw 0.5 cup Butter, salted
Directions
Cream together butter and sugar in heavy sauce pan. Wisk eggs until well blended and stir into creamed mixture. After eggs and creamed mixture are combined add lemon juice and zest stir and cook on medium low heat stirring continually until mixture thickens to coat the spoon. Pour into container and cover surface of curd with plastic wrap and chill. Mixture will continue to thicken as it cools.

Serving Size: Makes approximately 10 4 oz ( half cup) servings.
