Brenda's Best Lasagna

1 lb. Honeysuckle White turkey Italian Sausage1/2 c. chopped onion1 clove garlic, minced1 16 oz. can diced tomatoes1 8 oz. can tomato sauce1 6 oz. can tomato paste2 tsp. dried basil, crushed1 tsp. salt8 oz. lasagna noodles1 T. cooking oil2 eggs2 1/2 c. cottage cheese3/4 c. grated parmesan cheese2 T. dried parsley flakes1 lb. shredded mozzarella
Cook meat, onion, garlic until meat is browned. Drain. Stir in tomatoes and next four ingredients. Cover, simmer 15 minutes, stirring often. Meanwhile cook noodles til tender in boiling salted water with cooking oil added to water. Drain, rinse noodles. Beat eggs, add cottage cheese, 1/2 c. parmesan, parsley, 1 t. salt, 1/2 t. pepper. Layer half of noodles in 13x9 baking dish. Spread with 1/2 of cottage cheese mixture, add 1/2 of mozzarella and 1/2 of meat sauce. Repeat layers. Sprinkle top with remaining parmesan. Bake at 375 for 30 to 35 minutes or 45 minutes if refrigerated.
