0.75 cup Ancient Harvest Quinoa 1 cup Spinach, fresh 1 cup Tomatoes - sm cherry tomatoes 1 cucumber (8-1/4") Cucumber (with peel) 2 cup Bush's Garbanzos (chickpeas) 0.5 cup Olive Oil 1.5 serving Lemon juice - of half lemon, 1 Tablspoon (Atkins) 2 tbsp (C) Vinegar, Red Wine (Gr Value) 1 tsp Dijon Mustard (Great Value) .25 tsp Garlic powder 1 tsp Oregano, ground
Directions
Combine quinoa, chickpeas and veggies.
Combine ingredients for dressing and pour over salad.
