Quick Ham and Lentil Soup

Ingredients
1 quart tap water2 cups lentils 2 quarts homemade or low sodium beef broth 1 Tb Better Than Bouillon, roasted beef base, low sodium (optional)3 Tb white vinegar2 cups canned diced potatoes 2 cups canned carrots7-8 ounces diced hamSalt to tasteOptional for serving:dry sherrygrated parmesan cheese
Directions
Before commencing, add water to lentils in large soup pot and let soak for about an hour. When ready to begin, add beef broth, beef base (if using a commercial beef broth), vinegar, carrots, and potatoes. Start to cook over low heat while dicing and adding ham steak. Cook on low for 1-2 hours and then taste for seasoning. Add salt if necessary. Serve with a splash of sherry and a sprinkle of parmesan cheese.
