Turkey Oatmeal Muffins

Ingredients
16 oz Turkey, Ground turkey, 93% lean 1 cup, chopped Onions, raw 3 clove Garlic 1 cup, diced Celery, raw 1.75 cup Del Monte Petite Cut Diced Tomatoes 1 cup, pieces or slices Mushrooms, fresh 1 cup egg whites 3 Tbsp = 1/4 cup = 1 large egg 2 cup dry Oatmeal (plain) (OR LESS)any variety of spices & herbs you choose!
Directions
Prep the onions, garlic, celery and mushrooms into small, diced pieces. Put into a large mixing bowl. Take off jewelry as you'll mix this with hands. Spray muffin tins (a 12 and a 6 - or repeatedly if you have to do batches). add the can of diced tomatoes - with juice . add the ground turkey. stir to mix all ingredients relatively well. add eggwhites . stir again. mixed well and a bit soupy. add oatmeal in 1/2 increments until it feels "meatloaf-y". too much oatmeal will make it feel too bread-y when finished. the raw oatmeal WILL absorb the liquid during the mix and during baking.
when mixing everything, add whatever spices you choose - italian seasoning, garam masala, oregano, salt and pepper. if you like "hot", chop up a whole jalapeno and toss into the mixture early on.
BAKE at 350 for 30 minutes. when removed from oven, you can put a spoonful of salsa or bbq sauce into the center and press down a bit. OR eat them "plain" with any variety of sauces at tableside. eat hot or cold. an easy-to-grab snack OR meal. Try crumbling one over a tossed salad! Calories to spare? add shredded no or low-fat mozzarella to the "mix". an extremely flexible and forgiving recipe! be creative!
