L.R. pizza or spaghetti sauce to can

Ingredients
3 gal. tomato juice4 cups chopped onion4 T. olive oil1-1/2 cups brown sugar1 T. blackj pepper4 tsp. oregano flakes2 T. chili powder4 tsp. garlic powder8 T. Italian seasoning8 Tsp. basil5 T. salt 3 quarts Ragu spaghetti sauce (traditional old world style)3/4 cup clear jell
Directions
Blend the onion with some of the tomato juice until smooth. Combine all ingredients except Ragu and clear jell in a very large kettle. Bring to a boil. Simmer for 30 minutes. Add Ragu. Bring back to a boil. Combine clear jell with a little water until smooth. Stir into sauce and boil until slightly thickened. Pour into quart jars. Wipe the rims clean. Put new lids on jars and tighten rings. Place in a canner and add hot water till it comes up to the jar necks. Place lid on canner. Bring to a boil. After water in canner comes to a boil, continue to boil for 15 minutes. Remove from canner and allow to cool on counter. After jars are cool, check to make sure they sealed. If they sealed the lid will be sucked down tight. You can now remove the rings and store on a shelf. If any didn't seal, store in the refrigerator and use soon. Makes about 16 quarts sauce.

    Clear Jell is a thickener similar to cornstarch, but it works better in canned things or pie fillings. You can usually find it in bulk food stores.
