Low Carb Sugar Free Peppermint Bark

1 bag Lily's White Chocolate Style Baking Chips 1 bag Lily's Semisweet Baking Chips (net carbs) 2 - 3 tbsp chopped Navitas Organic Cacao Butter 1 tsp peppermint extract 10 pcs Dr. John's Healthy Sweets - Hard candies (Net carbs)
A great holiday treat without the guilt! Only 1.1 net carb per piece.
You can sub any sugar free peppermints for the Dr. Johns.
Unwrap the peppermints and place in a plastic baggie. smash into very small pieces.
Melt white chocolate chips and 1 Tbsp cocoa butter in microwave at 20 second intervals stirring until well combined. Once it has cooled a bit, mix in a 1/2 tsp peppermint extract and the chopped mints. Add a couple drops of red food coloring and swirl for a marbled effect (optional).
Pour a very thin layer into each of 4 silicone candy bar molds (each holds 24 pieces). Place in the freezer while you do the chocolate layer.
Melt the bag of chocolate chips and the cocoa butter in the microwave as you did with the white chocolate and mix well. Allow to cool for a minute and add the other 1/2 tsp peppermint extract.
Remove the trays from the freezer and spread the chocolate layer thinly on top of the white chocolate.
Please back in the freezer until set (10-15 minutes) and then you can break the bars into individual pieces.
