Banana Blueberry Yogurt Bread

1/2 cup (1 stick butter) butter, softened1/2 cup sugar1/2 cup Swerve confectioners sugar replacement2 eggs, beaten1 1/2 cups flour1 tsp. baking soda1/2 tsp. salt1 cup mashed bananas, about 31/2 cup Fage Greek Yogurt 2% plain (or sour cream)1 tsp. vanilla
Preheat oven to 350 degrees. Spray four small loaf pans with olive oil or cooking spray. Pans should be 3/4 full of batter.
In a large bowl, cream the butter with sugar and Swerve until light and fluffy. Add the eggs and mix well.
Whisk together the flour, baking soda, and salt; combine with the butter mixture.
Add the sour cream, bananas, and vanilla; stir well.
Pour into prepared pans and bake for 40-45 minutes, or until a form comes out clean from the center.
Cool for 10 minutes and then turn the loaf out onto a rack.
Serving Size: Makes nine servings.
