Broccoli leek soup

Ingredients
1 cup Leeks 1 stalk, large (11"-12" long) Celery, raw 3 clove Garlic 1 tbsp Crisco Pure Vegetable Oil 1 tbsp Butter, salted 0.5 tsp MORTON Sea Salt, Fine Salt 2 cup, chopped or diced Broccoli, fresh 2 cup Campbell's Chicken Broth 2 cup (8 fl oz) Water, tap 45 grams Red Potato 0.5 tsp Thyme, dried (by JANYTOO)
Directions
Heat oil and butter over medium heat in a large pot until butter is melted. Add chopped leek, chopped celery, diced garlic and salt. Cook until leeks are soft, 7 minutes. Add thyme, chopped croccoli, broth, water, and diced potato. Bring to a hard simmer, reduce heat to maintain simmer and cover with lid tilted to let out steam. Cook 10 minutes. Let cool, puree. Adjust seasoning as desired.
