Karin's okra and tomato

Ingredients
20 pods (3" long) Okra 2 serving Tomatoes, Roma, Fresh, 1 Med 1 medium (2-1/2" dia) Onions, raw 2 clove Garlic 2 1tsp Olive Oil
Directions
*simmer chopped onion in oil until translucent
*add chopped garlic and simmer for another 1 - 2 min
*add chopped tomatoes, put lid on and simmer until juices come out
*remove all to another bowl
*simmer chopped okra (add a little more oil if needed)
*when softened but still rather firm, add back onion, garlic and tomatoes, and simmer for another 3-5 minutes so all flavors meld

serve over jasmine rice
