Step 1 1 lb. sweet Italian turkey sausage (links or ground)1 Tbsp. olive oilStep 21 large onion, chopped3 topless celery stalks, finely chopped2 cloves garlic, mincedStep 38 cups water2 cups low sodium chicken broth 16 oz. dry lentils, rinsed3 large carrots, peeled, sliced 2 15 oz. cans diced tomatoes1 Tbsp. garlic powder1 Tbsp. chopped fresh parsley2 bay leaves½ tsp. dried oregano¼ tsp. dried thyme¼ tsp. dried basil1 tsp. salt, or to taste½ tsp. black pepperStep 412 oz. dry Orzo (AKA Ditalini Pasta)
Step 1
Heat the olive oil in a large pot and cook the sausage over medium heat until browned.
Step 2
Add onion, celery and chopped garlic, and sauté until tender and translucent.
Step 3
Add the water and chicken broth. Stir in lentils, carrot, and tomatoes. Add garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender (1 to 2 hours).
Step 4
Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.
Serving Size: Makes 8 two cup servings
