Coconut Rice

Ingredients
1 cup cooked basnati rice1 tbsp canola oil1/2 cup raw shredded coconut1/2 cup raw peanuts1/2 tsp black mustard seeds1 tbsp urad dal4-5 small green chillies slit length-wise1 tsp salt (YMMV)1/4 cup chopped cilantro
Directions
Heat oil in a pan. Add mustard seeds. When they are done spluttering, add the urad dal, raw peanuts, chillies. Fry for 1 min. Mix in the rice, coconut & salt. stir for 2-3 min and take off the stove. Garnish with chopped cilantro.
