Hash Brown Casserole

Ingredients
3 cups or 1 bag of frozen hash brown potatoes1 medium onion1 cup diced velveeta cheese1 can cream of chicken soup3 tsp margarine**1/2 cup sour cream OPTIONAL***Salt & Pepper to taste**Breadcrumbs OPTIONAL**
Directions
Preheat over to 350 degrees.
Set frozen hash browns out to thaw.
Dice onion and sautee over medium heat with 3 tsp margarine until onion is translucent.
Dice Velveeta and pour into mixing bowl.
Pour onion/butter over velveeta.
Add Hash browns, chicken soup, *sour cream*, salt & pepper.
Mix well and place in Casserole dish.
**can top with breadcrumbs**
Bake @ 350 degrees for 1 hour.

    This recipe seems like it could be lightened up more for healthier eating. Lite velveeta cheese, Lite or fat free sour cream, 98% fat free cream of chicken. - 3/7/07
