King Ranch Casserole

1 lb boneless skinless chicken breast1 can cream of mushroom soup1 can cream of chicken soup1 10 0z can of Ro Tel tomatoes and green chilies1 cup Swanson 99% fat free chicken broth8 corn tortillas (6 in diameter)1 onion chopped1.5 cup shredded low fat Cheddar cheese1/2 cup salsa
Cook chicken.
You can use a Rotissery chicken also (Cook chicken in small amount of water, lightly salted until tender. Bone and cut into pieces.)
To make a sauce blend the following until smooth. The 2 cans of soup and can of tomatos with the chicken broth and salsa. Set aside. Into a 2 1/2 quart casserole (greased), place a layer of chicken, 1/2 the tortillas cut into pieces, 1/2 of the onions, 1/2 of the cheese and 1/2 of the sauce. Repeat layers ending with grated cheese on top.
350 for an hour
