Featherlight Cake

Ingredients
1 1/3 cup cake flour2 1/2 tsp baking powder1/4 tsp salt2/3 cup superfine sugar2/3 cup hot water1/2 tbsp vanilla2 tbsp grated lemon zest3 egg whites, room temperature
Directions
Preheat oven to 350F.
Sift flour with baking powder, salt, and half the sugar.
Add boiling water slowly and whip until smooth with a hand mixer.
Beat in vanilla and lemon zest.
Beat egg whites until beginning to peak.
Add remaining sugar to egg whites beat until thick, smooth and stiff.
Fold gently into the batter.
Pour into a lightly greased and sugared tube pan.
Bake 25 - 30 minutes.
Invert to cool completely.
