Apple Flax Muffins

Ingredients
1-1/4 cup flax seed meal2 teaspoons baking powder1 Tablespoon cinnamon1 teaspoon nutmeg1/2 teaspoon saltArtificial sweetener equal to 3/4 cup sugar (1/2 cup can be flavored sugar-free syrup) (calculated using Splenda)4 large eggs, beaten1/4 cup oil (calculated using olive oil)1/2 cup liquid (flavored syrup or water) (calculated using water)1 Tablespoon vanilla1 medium apple, chopped fairly finely1/2 cup chopped almonds (optional - included in calculation)
Directions
Preheat oven to 350 F. Grease a 12-muffin tin very well.

1. Mix the dry ingredients together, then add the rest of them.

2. Let batter stand 10 minutes, then put into the muffin pan and bake for about 18 minutes until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.

    Recipe chgs: used 1/4 cup unsweetened apple sauce instead of oil; used 1/4 cup of xylitol & about 25-30 drops of Stevia extract (NOW brand) for sweetener, (Next time add 1 tsp of stevia extract which is equiv to 1/2 cup of sugar) 1/8 tsp of ground cloves instead of nutmeg. Baked 40 minutes not 18 - 1/18/15
