Greg's 2021 Healthy Yellow Cake

Ingredients
16.5 oz Cake, yellow, dry mix, light .34 cup Applesauce, unsweetened 4 serving 1 Egg- large, fresh 5 tbsp Chia Seed (Nutiva) 1 Tbsp 0.5 cup Flour - Gold medal all purpose flour 1 cup (8 fl oz) Water, tap 1 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry) .25 cup (not packed) Raisins
Directions
Mix cake mix, water, applesauce, eggs until blended but not smooth.
Stir in chia seeds with all *All-Purpose-Flour.
Lay foil sheet inside 9x13 pan, spritz or light smear of olive oil
Layer half of the mixture, spread oatmeal and raisins, top with rest of mixture.
1) Place pan on rack in Microwave/Convection oven, Bake Convex @ 375F for 23 minutes.
OR
2) Place pan on rack in preheated oven, Bake 350F 23-28 minutes.

Remove from oven, let cool 'til warm, remove foil w) cake to cooling rack.
