Brown Rice Pilaf

Ingredients
about 1/2 cup each chopped onion, green pepper and mushrooms (or whatever veggie you wish to add)5 grams or so of chopped garlic (to taste)2 tsp Olive Oil1 cup Jubilee Brown Rice Blend2 cups boiling water
Directions
Heat oil in pan until hot. Saute vegetables and onion. Add rice mix and stir well. Add water. Bring mixture to a boil. Cover and reduce heat to simmer. Cook for 50 minutes or until water is absorbed. Let stand for 10 minutes covered. Fluff with fork and enjoy!
