Honey Cornmeal Muffin

Ingredients
3/4 c honey1/2 c canola oil2 eggs1 c flour1 tbsp baking powder1/2 tsp baking soda1/4 tsp salt1 1/2 c cornmeal3/4 cup buttermilk
Directions
Beat honey and oil together until smooth. Add eggs. Beat well.


Combine flour, powder, salt, soda and cornmeal in bowl. Add to egg mixture alternating with buttermilk.


Fill 18 paper-lined muffin cups full. Bake for 15 to 20 minutes in 350 degree oven.

Makes 18 muffins.
