MOIST AND DELICIOUS CHICKEN PATTIES

Ingredients
16 ounce Fresh Ground Chicken 1 medium Onion, diced 1/4 cup Red Bell Peppers, diced 1.5 ounce mild Banana Pepper Rings (about 15 rings), diced2 tablespoon Banana Pepper Juice 1/2 cup Panko Bread Crumbs2 teaspoon Olive Oil 1 tsp Rosemary ,fresh or dried, minced 1/4 teaspoon Garlic Powder 1 teaspoon Salt 1/2 teaspoon Black Pepper 1 large Egg, well beaten 2 tablespoons 1% Milk (add to beaten egg)1/4 cup Part Skim Mozzarella Cheese, shredded
Directions
Add the diced red pepper, pickled banana pepper and pickle juice together and set aside. In a bowl, place the ground chicken, garlic powder, beaten egg/milk, and salt and pepper. Caramelize the onion and rosemary to a rich golden brown: when brown, add the pickle juice/bell pepper/banana pepper to the onion and stir until the juice has evaporated. Add to the ingredients bowl and mix ingredients gently. Brown the panko crumbs and the minced rosemary in the olive oil until nicely brown. Add to bowl of ingredients and gently mix together. Lightly grease a skillet with oil or PAM. Scoop about 1/3 cup patty mixture into skillet and spread to 1/2 inch thickness. Turn patties to brown well on both sides. Patty's can be formed and frozen (use wax paper or plastic wrap between each patty) for up to 3 months.
