High Protein Cauliflower Soup (Vegan)

Ingredients
- Half a head of cauliflower- Extra firm Tofu (0.2 block)- Leeks (0.5 cup), white part of the leek bulb- 1 Serving Soy milk (approx. 8 oz)- Salt (1 dash) optional, or use other seasoning to taste- Water (one cup, either tap or filtered)
Directions
Process cauliflower, tofu, leeks, soy milk and water in blender or food processor on liquefy setting

Add water or extra soy milk after blending if mixture comes out too thick.

Cook in sauce pan for 5 to 10 minutes.

Makes approximately three 8-oz servings.
