Blueberry Pancakes

Ingredients
2 large egg1 cup skim milk 3 tbsp butter, melted 1.5 cup self-rising flour3 tbsp sugar 1 cup blueberries
Directions
Beat eggs with whisk in medium sized bowl. Add milk and melted butter, whisk. Add flour and whisk until large lumps are gone. It may be a little stiff, add a little milk if necessary. Add blueberries and whisk to distribute in batter. Heat griddle to 375 degrees and spray with cooking spray. Scoop batter with 1/4 cup measure onto griddle. Flip when bubbles appear in middle of pancake and edges are dry. Cook a few seconds until pancakes are brown. Serve with butter and pancake syrup.
