Meatloaf Made Keto

Ingredients
24 oz 73% Lean Ground Beef 2 large Eggs1 ounce Pork Rinds, crushed8 slices Bacon 4 tbsp *Flax Seed Meal (ground flax) 4 tbsp Heinz, One Carb Reduced Sugar Tomato Ketchup 1 tsp Salt Pepper and other spices, to taste - garlic, paprika, chili powder, oregano, basil, etc (even a dash of nutmeg adds oomph)
Directions
Preheat oven to 375 degrees.
Mix all ingredients except the bacon and ketchup.
Form a loaf but do not leave in loaf pan.
Place loaf on a cookie cooling wire rack OVER a cookie sheet with sides. This will allow excess grease to drip off of the loaf and create a lovely crust on all sides - no soggy mess here!
Drape or wrap the bacon around the loaf and spread the ketchup on the top.
Bake in a 375 degree oven for approximately an hour, or until the internal temperature reaches 165 degrees.
Allow to cool for 10 minutes before slicing and serving.

*If the grease in the cookie sheet generates any smoke during cooking, simply add some water to the bottom of the pan.

**As an alternative to a loaf, you can form a ring around a mason jar, on a parchment lined cookie sheet (with sides). While cooling, the mason jar will pull the excess grease inside!
