Quick Chicken Burrito

1 can black beans, rinsed and drained1 can diced tomatoes canned with peppers (Rotel), undrained12 oz chicken breast, boneless and skinless1 tbsp. dried oreganosalt and pepper4 whole wheat tortillas1/2 cup sharp cheddar cheese, shredded
Combine black beans and salsa in a saucepan over medium low heat. Stir occasionally while preparing chicken.
Sprinkle uncooked chicken breast on both sides with oregano, salt, and pepper. In a nonstick skillet over medium, heat butter and oiive oil. When melted and hot, add chicken. Cook chicken over medium heat (5 minutes per side is an average time for a whole chicken breast) until cooked. Let chicken rest on cutting board for 2-3 minutes, to allow juices to redistribute, then slice across the grain. Heat tortillas briefly. Drain tomato-bean mixture and divide among the four tortillas. Divide chicken and cheese also equally among the four tortillas. Roll burritos and serve.
