Spinello Mushroom Frittata

Ingredients
12 serving 1 large egg (per the egg board) 50g 4 oz yogurt Greek Gods Poseidon Greek Yogurt nonfat plain 3 cup, pieces or slices Mushrooms, fresh 2 tbsp Extra Virgin Olive Oil for greasing parchment
Directions
Sauté mushrooms on medium heat I n dry pan until liquid is released and then cooks off. Blend eggs and yogurt in bowl. Add salt, pepper and herbs like time and rosemary. Preheat oven to 350 degrees. Grease bottom of 9x13 baking dish with oil or butter then line with parchment and coat with oil. Put cooked mushrooms in dish and pour eggs over mushrooms. Bake for 20 minutes until set. Serving Size: Makes 8 servings
